So, today is Sunday, which means it’s Pancake Sunday! I like to peruse Pinterest and find new pancake recipes. I think today was my final straw with whole wheat pancakes. No matter what I do, the pancakes just don’t turn out fluffy and as delicious as the one’s my dad makes. It just isn’t the same. So I think, exceptions will be made for pancakes with flour. 🙂

So you have fluffy pancakes, cinnamon bun pancakes and chocolate pancakes.
Normally I’ll just make regular whole wheat pancakes and sometimes I’ll make muscle milk pancakes after a long run. But nothing compares to dad’s pancakes.
I think that secret is just a griddle. Then temperature is perfect and pancakes can be cooked simultaneously. I’ll definitely be getting one of those for the apartment.

Some pancake molds, also can be used for eggs and the tovolo pancake pen. By the time I graduate with my Master’s degree, I’ll be able to make the perfect pancake, don’t you worry!!

What a wonderful New Years Eve! Now that all the festivities are over and the family and friends have headed home, school is approaching quickly. It blows my mind that this is my last semester of undergrad.
I absolutely love Christmas and I’m sad it came and went so quickly. The sad thought of taking the tree down and saying goodbye to all the Christmas treats is sad.
In the midst of all the festivities, I have been crafting!
For $0.75 I took this shelf and revamped it.
I just bought some scrapbook paper from Michaels and decoupage-d it to the backboard. We will gorilla glue it back sometime today.
Another project I will be constructing with my dad is a bib hanger and medal hanger for my future half marathon running bibs and medals. You have no idea how excited I am that 2013 will be the start of my road race career come May and the ability to travel over the United States to run half marathons and 5k’s! I do plan on attempting a marathon, but I will save that for 2014 probably!

I have always been fascinated with ultramarathons, starting with Bart Yasso’s My Life on the Run and then followed by Dean Karnazes 50/50 and Ultramarathon Man. Next was Pam reed and her book The Extra Mile: One Woman’s Personal Journey to Ultra-Running Greatness.
I have made it one chapter in Scott Jurek’s Eat & Run, so far and it’s already interesting.
